Our approach

Audit-Ready Isn't Something We Work Toward. It's How We Operate.

Most sanitation companies treat audits as events, something to prepare for, scramble toward, and survive. Extra shifts get pulled. Documentation gets backfilled. Everyone hopes it holds up under scrutiny.

That's not a sanitation program. That's a performance.

At Elite PCS, audit-ready isn't something we work toward. It's the baseline we operate from every single shift. Every procedure is executed to standard. Every log is completed the night the work happens, not reconstructed the morning an inspector calls. Every corrective action is documented immediately, accurately, and completely.

Our teams are trained in USDA, FDA, HACCP, and OSHA requirements, not just aware of them. When an inspector walks through your door, your records are current, your documentation is organized, and your crew understands exactly what's expected of them.

There's no scramble. There's no gap to explain. There's just the work, done right, every time.

The Standards We Build Programs Around

Our sanitation programs are designed to satisfy the requirements of every major food safety regulatory framework. Here's what that covers.

USDA

We Know What FSIS Expects. We Build Programs Around It.

Meat, poultry, and egg product facilities operate under some of the most rigorous federal oversight in the food industry. USDA / FSIS requirements aren't suggestions, and inspectors know the difference between a facility that understands the standard and one that's guessing at it.

Pre-operational and operational sanitation procedures executed and documented daily SSOP development, implementation, and shift-by-shift record keeping Corrective action protocols logged immediately when deviations occur, not reconstructed after the fact Direct contact and non-contact surface procedures maintained to federal standards Pre-operational verification inspections completed before every production shift
FDA

FSMA Isn't a Checklist. We Treat It Like the Standard It Is.

FDA Food Safety Modernization Act requirements represent a fundamental shift in how food facilities approach safety, from reacting to problems to preventing them.

Current Good Manufacturing Practices executed and maintained every shift Preventive controls for human food aligned with your facility's food safety plan Environmental monitoring supports to identify and address contamination risks Allergen control and cross-contamination prevention procedures Sanitation procedures documented and verifiable at every step
HACCP

A HACCP plan is only as strong as the sanitation program behind it.

Gaps in execution, missing corrective action records, or inconsistent chemical concentrations don't just create compliance problems, they create pathways for contamination that your HACCP plan was designed to prevent.

Sanitation procedures mapped directly to your critical control points Corrective action documentation completed immediately when standards aren't met Verification and validation record support maintained shift by shift Chemical concentration monitoring and titration performed by trained crew members Ongoing crew training on HACCP-relevant sanitation practices and standards
OSHA

Safety Isn't a Policy We Post on the Wall. It's How We Operate.

Sanitation work is physically demanding and environmentally complex, chemicals, wet floors, heavy equipment, and overnight shifts create real hazards that require real protocols. A crew that isn't properly equipped, trained, and supervised isn't just an OSHA liability. It's a danger to itself and everyone in the facility.

Elite PCS treats safety as a non-negotiable operational standard, not a checklist item. Every crew member is equipped, trained, and held to the same safety requirements every shift, regardless of whether anyone is watching.

Full personal protective equipment provided to every team member at no cost, beige hard hat, green raingear, protective sleeves, nitrile green gloves, hearing protection, and eye protection Chemical handling and storage maintained to OSHA standards, including proper labeling and containment Lockout/Tagout procedures followed without exception during equipment cleaning and maintenance Safety Data Sheets maintained on-site, current, and accessible at all times Regular crew safety training and clear incident reporting protocols

A safe crew is a consistent crew. And a consistent crew is what your facility depends on.

Audit preparedness

When Auditors Walk In, We're Already Ready.

USDA, FDA, SQF, and BRC audits don't always come with advance notice. When an auditor arrives, they will review your records, interview your crew, and inspect your facility from floor to ceiling. The difference between a strong score and a costly finding comes down to one thing, whether your program runs the same way every single day, or only when someone is watching.

At Elite PCS, we don't treat audits as emergencies. We treat every shift as if an auditor is already in the building.

Our documentation is current because it's completed the night the work happens. Our crew knows the procedures because they follow them every shift, not because someone briefed them that morning. When auditors have questions, our management team is available, knowledgeable, and ready to answer them directly.

That's why our clients consistently achieve 98+ audit scores. Not from last-minute preparation. From running a program that doesn't know any other way.

Records we maintain

Documentation That's Ready Before You Ask For It

Every piece of documentation an inspector, auditor, or QA manager might request is maintained daily. Here's what we keep current at every client facility.

SSOPs

Sanitation Standard Operating Procedures written for your specific facility, equipment, and regulatory requirements. Updated when processes change.

Pre-Op Records

Pre-operational inspection records completed before every production shift. Documented verification that equipment and surfaces are clean and sanitized.

Corrective Actions

When something doesn't meet standard, the corrective action is logged immediately. What happened, what was done about it, and how we prevent it from recurring.

Chemical Records

Concentration logs, application records, and Safety Data Sheets for every chemical used in your facility. All maintained on-site and up to date.

Training Logs

Records of crew training, safety briefings, and competency verification. Auditors want to see that your sanitation team is trained. We can show them.

Shift Reports

Daily performance documentation showing what was cleaned, how long it took, any issues encountered, and how they were resolved. Available to you and your QA team.
